Southern Spiced Potato Peel Recipe (Reduce Food Waste)

Continuing my mission to reduce our food waste, today I bring you a recipe for southern spiced potato peel. According to the Guardian, almost half of potatoes bought in the U.K are thrown away. Producing 15 million tonnes of waste per year costing consumers £230million. So, when potatoes come into my household, I’m making a concerted effort to not let a single one go to waste.

While there are plenty of occasions there is no need to peel potatoes, I do love proper crispy roasties and I just can’t achieve this when the skin is left on. However, I’ve been finding lots of ways to use up the potato peel. My previous efforts have included healthy potato skins for snacking on of an evening and a delicious Potato Peel Soup which also used up all the vegetable peel from a roast dinner.

Southern Spiced Potato Peel Recipe

For this recipe, I used the skins from around 8 potatoes which I was peeling to make roasties to go with our dinner. I cooked them alongside the roast potatoes but if you don’t want to make them on the same day, the peels will be covered with water in a bowl in the fridge until you’re ready to use them.

They make a great side dish – this provided enough for two of us, or a nice snack instead of crisps. I served them with garlic mayo but you can, of course, serve them up with whatever dip you fancy.

Southern Spiced Potato Peel

I’ve called these Southern spiced potato peel because the flavour is similar to Southern fried potato wedges.

However, you could adjust the spices according to your own tastes, adding chilli powder for a bit of a kick, for example. While these are spices most people would have in, it’s fine to mix and match although I do love the golden colour the ground turmeric gives. There are also versions of this recipe that use ground coriander – for me, I find it overpowers all the over flavours so don’t tend to use it.

Using the quantities listed below gives a lightly spiced flavour – for a more intense flavour add a bit more of each spice.

Ingredients – Southern Spiced Potato Peel

  • 1TBSP Vegetable Oil
  • Potato Peel (I used the peel from 8 potatoes)
  • 1/2 TSP Ground Cumin
  • 1/2 TSP Ground Tumeric
  • 1/2 TSP Paprika
  • 2 Cloves crushed garlic (or 1TSP of paste/easy garlic)
  • Salt and Pepper to taste

Method – Southern Spiced Potato Peel

  1. Preheat oven to gas mark 5 (170C).
  2. Place the potato peels in a bowl and add the oil, spices and seasoning. Mix well until the peels are coated in the spice mixture.
  3. Transfer to a baking tray and place in the oven for 30 -35 minutes.
  4. Turn often during cook to ensure an even bake.
  5. Serve immediately either as a snack or side dish to a main meal.
