Healthy Crispy Potato Skins Recipe (cheap too!)

One of the things I’m really keen to do is completely eliminate food waste in our house. Cutting back on food waste is not only good for the environment but also really good for our wallets. I’ll admit to not always cooking the healthiest recipes but these healthy potato skins are cheap and use up potato skins which might ordinarily have gone in the food bin.

When it comes to cooking, I’m often actually quite a lazy cook. I avoid peeling potatoes and vegetables where I can and I use my slow cooker lots too. However, the are occasions when I can’t resist making proper roast potatoes and that means they need peeling. It’s all too easy just to chuck the potato skins in the bin – however, I like to try and use them up if I can.

This potato skin recipe is really simple and as it oven roasts the potatoes and only uses a couple of squirts of fry-light, it’s pretty healthy too. The only other ingredients are salt and pepper to taste and additional flavouring if you want them such as paprika or chilli. Personally, I prefer the plainer version!

Healthy Potato Skins Recipe

For this recipe, I used the skins of two large potatoes that I had peeled to make roast potatoes earlier. This would make enough for two people as a snack or perhaps a starter. If you want to make these later in the day after peel in your potatoes, just pop them in a bowl with some cold water.

Ingredients:

  • Potato skins
  • Fry-light
  • Salt and Peper
  • Paprika, chilli, garlic powder (all optional)

Method:

  1. Preheat the oven to gas mark 6 or 200 degrees C
  2. Place the potato peelings on a baking tray skin side down and lightly spray with the fry-light. Cast iron cookware would work well for this recipe. Season well with salt and pepper. Add paprika and chilli if using.
  3. Cook for 25 minutes until starting to turn golden brown.
  4. Turn over and cook for a further 20 minutes or until both sides look nice cooked.
  5. Serve warm.

We find these a great to munch on in front of the television instead of crisps. They are great for dipping too although adding sauce does take away some of the ‘healthy’ part!
