
Cheap & Easy Tomato Pasta Sauce Recipe

I’m a huge fan of Italian food and will often make myself a quick pasta lunch rather than a sandwich when I’m working from home. I love this easy pasta tomato sauce recipe as it’s much quicker than making a full-blown tomato sauce (which I like to leave simmering for a couple of hours!)
Another great thing about this is recipe is that it tastes really fresh and can be made using whatever type of tomatoes you might have in. I like to use baby plum tomatoes but you could use cherry tomatoes, beef tomatoes or whatever needs using up.
Easy Tomato Pasta Sauce Recipe
This sauce is really light which is one of the reasons it makes a perfect lunchtime dish. It is also cheap to make – I always buy basics pasta and spaghetti as we eat so much of it and the tomatoes I used came from the reduced section. These instructions are based on one portion but can easily be doubled or tripled.

Prep time: 5 minutes.
Cooking time: 12 Minutes
Ingredients:
- Pasta – I used spaghetti but any pasta will work. I use a pasta measure to gauge how much I need.
- 150grams of Baby Plum Tomatoes
- Half an Onion
- 1 Clove of Garlic
- 2tsbp of olive oil
- Salt & Pepper to taste
- 8 Basil Leaves
Instructions: Easy Tomato Pasta Sauce Recipe
- Bring a pan of salted water (pasta water should taste like the sea) to the boil and add the pasta, cook according to packet instructions.
- While the pasta is cooking dice the onion and cook over a medium heat in the olive oil.
- When the onion starts to brown, add the tomatoes and cook until soft and then lower the heat before adding the garlic and basil. Season to taste.
- When the pasta is cooked, add a small ladle of the pasta water to the pan with the tomatoes to create a sauce.
- Drain the pasta and combine with tomato sauce.
- Serve immediately.
