These slow cooker recipes for leftovers are perfect for using up any bits of Sunday lunch that might be lurking at the back of the fridge!

Don’t throw away those Sunday lunch leftovers, try these recipes to turn them into a lovely Monday night meal.

3 Slow Cooker Recipes For Sunday Lunch Leftovers

None of these recipes contains exact measurements, just rough guidelines. I’m definitely a chuck it all together and see what happens kind of cook. You can also tweak these recipes depending on what you have and how much you have of each ingredient and how many people you want to feed.

Slow Cooker Recipes For Leftovers 1: Easy Creamy Chicken Chowder

Great for using up leftover chicken, potatoes and carrots.

Add the following ingredients to your slow cooker;

  • 1 large diced potato (this can be cooked leftover potatoes or a raw one from the cupboard)
  • 2 diced Carrots  (again can be cooked or raw)
  • 2 pints of Chicken stock – can be homemade or made with stock cubes.
  • 1 small tin of sweet corn.
  • Seasoning to taste

Leave in the slow cooker for 5 – 6 hours on low. My slow cooker has a setting where it goes onto a warming mode after the timer has finished which is great if I’m out of the house all day.

Before serving add 200mls of double cream and use a hand blender to blitz around a quarter of the chowder, to give a chunky yet creamy consistency. Blitz for longer if you would prefer a smoother textured chowder. Enjoy with crusty bread.

Slow Cooker Recipes For Leftovers 2: Ginger  Chicken (or pork) Ramen

Great for using up leftover chicken or pork, carrots and cabbage.

Add the following ingredients to your slow cooker;

  • Leftover Pork or Chicken
  • Leftover Carrots
  • Ginger – I tend to use Easy ginger or ginger paste as it’s so quick
  • Garlic – a couple of cloves crushed should be enough
  • 2 pints of Chicken stock – can be homemade or stock cubes.
  • 1stp of soy sauce
  • Chili flakes if you would like it to have a bit of a kick

Leave to cook on low for as long as you are out of the house. I would recommend a minimum of four hours. Before serving put some ready for wok noodles in boiling water to warm through before adding to the chicken or pork broth and leaving for about 5 minutes. You could also add any leftover cabbage or broccoli at this stage. Serve in big deep bowls.

What To Do With Chicken Leftovers

Slow Cooker Recipes For Leftovers 3: BBQ Pulled Pork Jacket Potatoes

I find it best to use a slow cooker liner with this recipe as the BBQ sauce has a high sugar content which will burn a little at the edges and can be a pain to get off the bowl. You will also need a slow cooker divider. You can buy these online or make a simple one using foil. This will keep the two parts of dish separate.

Serves Two

  • Diced leftover pork (chicken would work too)
  • 3-4tbsp of BBQ sauce – depending on how saucy/strong you like your dish.
  • 2 large Baking Potatoes wrapped in tin foil
  • Any leftover Sunday veggies you may have

Firstly, line your slow-cooker with the liner and add the divider.  Cut a second liner in half and use this to line the area to one side of the divider. Add the pork mixed with the BBQ sauce to this side. This will keep it separate from the potatoes and should help avoid any spillages into the other compartment.

On the other side of the slow cooker place the two foil-wrapped potatoes. This dish will need a minimum of six hours of cooking time to ensure the jacket potatoes are cooked through.

To serve simply cut open the potatoes and stuff them with the pulled pork. I like to stir fry any leftover veggies I may have to accompany this dish. Yum!
