Vegetable stew is a really simple and comforting dish. It’s easy to make, filling and packed with nutrients thanks to all the veggies. This is my recipe vegetable stew recipe which I made using a yellow sticker stew pack I found recently.
A stew pack is one of those things I pick up most weeks when I go shopping, especially during the winter. It often provides better value than buying the ingredients separately and can be used in a multitude of ways.

I’ll be honest, my go-to with a stew pack is usually vegetable soup, which I eat for my lunch most days during the winter. However, since I already have quite a few soup recipes on this blog, I thought it might be time to try something different which I why I opted to put together this Simple Vegetable Stew Recipe.

The stew pack I used to make this stew was yellow stickered, meaning it was cheaper than it would usually have been.
As most supermarkets do stew packs fairly cheap, I still thought it was worth writing about, as most people would be able to get the same ingredients fairly cheaply. I added two potatoes to the content of the stew pack but did not use one of the onions.

I’ve made this stew several times and I have occasionally found it can be a little on the sweet side. I think it depends on the vegetables, how sweet they are and the time of year. To counter this, I use some gravy granules and a little bit of white wine vinegar.
You can make the stew using chicken or vegetable stock depending on whether you want it to be vegetarian or not and the same goes for the gravy granules too.
How Many Portions Does The Stew Make?
Using the ingredients listed below, the stew made two generous portions. If you have a smaller appetite it might make two portions and leave some leftovers for the following day.
As this recipe is fairly simple, you could add extra vegetables if you wanted to make it go further, you just might need to add a little more stock and some extra seasonings.

Can I Freeze The Vegetable Stew?
While the stew can be frozen, I do tend to find the vegetables are a bit mushy. If you have some of this vegetable stew leftover, my advice would be to add a little water and blitz into a soup and freeze that instead.
Simple Vegetable Stew Recipe Using A Stew Pack


Simple Vegetable Stew Recipe
Ingredients
- 1 tbsp vegetable oil
- 1 onion
- 5 carrots
- 2 parsnips
- 2 small potatoes
- 1 small swede
- 2 tbsp flour
- 1.5 pints vegetable stock
- 1 tsp thyme
- 1 tbsp gravy granules (if needed)
- 1 tsp white wine vinegar (if needed)
- salt and pepper to taste
- chopped parsley to serve (optional)
Instructions
- Peel the onion and finely dice. Add to a large casserole dish or deep cooking pan along with the vegetable oil and gently fry over medium-low heat until the onions become translucent.
- Peel and cut the rest of the vegetables (carrots, parsnips and swede) into 1-inch chunks making sure they are all roughly the same size.
- Boil the kettle and make up your stock if using a stock cube.
- Cut the potatoes into large chunks, leaving the skins on.
- Add all of the vegetables and potatoes to the casserole dish and give it a good mix. Add the flour and stir until everything is well coated.
- Add the stock to the pan and bring to the boil. Add the thyme and black pepper. Reduce the heat to low and allow to simmer for 45 minutes.
- Taste the vegetable stew. If it's a little sweet add the gravy granules and white wine vinegar and mix well. Add salt to taste if needed (stock can be quite salty so I tend to leave adding extra salt to the end of cooking).
- Slide a knife into the vegetables to make sure they are cooked all the way through - swede usually takes the longest. If the stew is too thick you can add more stock, if it's too runny add more gravy granules.
- Serve immediately, using the parsley to garnish. Enjoy!
